Ingredients:
1 lb. TCPC Lemon Pepper Linguine or Rotini, cooked according to package directions.
(If you use linguine-snip into smaller pieces with kitchen scissors)
1 - 8 oz. TCPC Lemon Artichoke Pesto, defrosted.
1 each: red, green, yellow, and orange pepper, washed and cut into julienne strips.
1-2 bunches scallions cleaned and cut on the diagonal.
Salt and pepper to taste.
1-2 Tbsp. fresh lemon zest.

Instructions:
Place cooked, drained pasta in a large bowl.
Stir in Lemon Artichoke Pesto, warm sauce for 30 seconds just before you toss it with cooked pasta.
Add Julienne peppers, scallions, salt and freshly ground pepper, to taste.
Toss all the ingredients until blended.
Sprinkle the fresh lemon zest over the top of the pasta salad and toss just before serving.
Chill.
Note:
You may use any TC Pasta you choose, but Lemon Cracked Pepper Linguini is my favorite.
Add other veggies, olives, cooked chicken, shrimp, crumbled feta or cubes of your favorite cheese.
Top with chopped fresh basil or parsley, as desired.
Easy and delicious. Great for family dinners, BBQ’s and parties! Enjoy!
